Vegetable Pilau with Samosas
 |
Beef Samosas | 12 |
| Basmati Rice | 500g |
| Oil | 75ml |
| Diced onion | 2 med |
| Cinnamon Sticks | 3 |
| Cloves | 3 |
| Whole peppercorns | 5 |
| Jalapeno pepper sliced | 1 |
| cumin seeds | 1/4 tsp |
| Tomato chopped | 2 med |
| Cilantro chopped | 2 tbsp |
| Frozen peas & Carrots | 2 cups |
| Garlic minced | 2 tsp |
| Ginger minced | 2 tsp |
| Salt | 1 1/2 tsp |
| Turmeric | 1/4 tsp |
| Pepper | to taste |
| Lemon juice | 1 tbsp |
| Water | 3 cups |
| 1. | Wash and soak rice for 10mins. |
2. | Heat oil, add onions, sauté until golden brown, add cumin seeds, peppercorns, cinnamon sticks, cloves, jalapeno pepper, cilantro, tomatoes, garlic, ginger, peas & carrots, turmeric, salt and lemon juice. Cook until tomatoes are tender. |
3. | Add water, bring to boil. |
4. | Drain rice, and add to the pot, cover and cook at low heat or in the oven at 350° F, until the all the liquid is absorbed and the rice fluffy. |
5. | Deep fry the samosas's, remove from fryer and set on paper towel to remove excess oil. |
6. | Place the pilau on the plate, rest the samosas on the on the rice and garnish |
